Tsukudani and Osouzai

Tsukudani
Tsukudani refers to preserved food of which the ingredients are simmered in a salty-sweet sauce made of soy sauce, mirin, sake, and sugar. The liquid is cooked down until fully absorbed.
Osouzai
Osouzai (pronounced O-so-zai) which essentially means side dishes. A normal Japanese household will make Osouzai (or okazu), few dishes that accompany the rice and soup.
