Salae leaf Katuo shuto with olive oil Basil sauce

Beef in block 160g
Goda cheese right amount
Cucumber in slice 3
Herb vegi right amount
Katsuo Shuto in micro oven([600w]no rap and 20sec) 1tablespoon
Lemon 1tablespoon
olive oil 3tablespoon
Basil 1pack
olive oil right amount
Salt and pepper right amount

How to make

Slice the beef and rap and pant.

Decorate in circle on plate and cool it.

Mill the basil sauce ingredients.

Mix it with shuto and pour it on the beef.

Add cheese and salad.

Decorate the plate with sauce.

Katsuo Shuto

We select fresh Bonito from the inshore. We can only get 30 to 40g stomach and intestine from one Bonito(4 to 5kg). And these will be salted and aged in a long term fermentation. For the rich natural Umami component and amino acid, it goes great with Sake, hot rice. Also you can use it as Japanese anchovy and make several delicious dishes.
