We have added "kanzuri", a traditional condiment fermented for three years with several natural spices such as chili pepper, salt, malt, and yuzu, to the bonito shuto. Shuto is made by aging a rare part of bonito in salt storage for a long time and using Odawara local sake. We are confident that the spiciness and aroma of the refreshing kanzuri goes well with the richness of the Shuto.
