About Shiokara
Japan is surrounded by the sea on all sides and fish has always been a central part of the Japanese diet. From the appreciation of the ingredients, fish has been enjoyed throughout the country as a processed food that makes the most of the local flavor. Odawara City is no exception, and has been famous throughout the country for its excellent ports for inshore fish since the Manyo Period. We are proud of our shiokara. Shiokara, is a food in Japanese cuisine made from various marine animals that consists of small pieces of meat in a brown viscous paste of the animal's heavily salted, fermented viscera. The raw viscera are mixed with about 10% salt, 30% malted rice, packed in a closed container, and fermented for up to a month. We continue to pursue the deliciousness based on fresh raw materials and light salt processing.
