Shuto is a food that goes well not only with Japanese cuisine, but also with non-Japanese ingredients and cooking methods, such as pasta. Food and table coordinator Minori Kanami introduces recipes that incorporate “new ways to use Shuto”.

With the theme of ‘Bringing traditional Japanese fermented foods to the world’, Ms Kagami conducts seminars on cooking and table coordination using koji (Japanese rice malt), bonito flakes, and so on. She has spent several years in Thailand and Niigata, and still travels regularly not only to Japan but also to Asia and Europe to gather the latest food information and develop recipes that make use of fermented foods. In addition to appearing on TV programs, she also conducts fermentation workshops at sake breweries, teaches nutrition education at elementary and junior high schools, and serves as a food advisor at a long-established dried bonito flakes store in Tsukiji.

Recipe using Shiokara



These are recipes using squid Shiokara. Please choose the type of Shiokara that suits your taste. Shiokara uses the fresh mantle of squid with peeled skin. It does not contain arms or fins. Because the skin is peeled, it doesn't have that raw fishy smell. It is a special product with an elegant salty flavour.
