Tsukudani and Osouzai
Tsukudani
Tsukudani refers to preserved food of which the ingredients are simmered in a salty-sweet sauce made of soy sauce, mirin, sake, and sugar. The liquid is cooked down until fully absorbed.
Osouzai
Osouzai (pronounced o-so-zai) essentially means side dishes. A normal Japanese household will make a few osouzai (or okazu), dishes that accompany rice and soup.
