The seminar was held using rice noodles and dry bonito fish flakes, and other dishes , and with the coordination on how to set the table Having spent several years in Thailand and Niigata prefecture of Japan, she still regularly travels to Asia and Europe, gathering the latest food information and developing recipes that make use of fermented foods. In addition to appearing on TV programs, she participates in fermentation workshops at sake brewing manufacturers, giving lectures about food education at elementary and junior high schools, and advises at the long-established Tsukiji dry bonito fish flake store.

Recipe using Shiokara



This is a recipe using salt preserved squid. Please choose from different types of salt preserved products. Shiokara is used with the fresh peeled skin and the torso of the squid. . It does not contain feet or ears. Because the skin is peeled, it doesn't have that raw fishy smell. A very special products of an elegant taste of saltiness.
